Selecting only mature blue agave plants from a single state in the lowlands, close to the tequila volcano, is the first step in the process. The food is cooked in a conventional brick oven. The agave is then split into two pieces and ground in two different ways: first in our traditional Tahona and then in a mechanized mill.
