We cook the pias in brick ovens for two days, then crush them in the tahona mill. The juice is naturally fermented and double distilled in copper alambique stills and laid to rest for six months in American white oak barrels. The finished Reposado is an all natural, smooth, lightly hued spirit ready to be enjoyed.
