They store the spirit for 6 months in steel tank to allow it to mellow, before transferring it over to bourbon casks to mature for 2 years. Size: 750ML Proof: 80 (40% ABV) Origin: Mexico Estate grown Blue Weber agave from 300 ha lowland site, practicing organic. Agave are roasted at 120 C for 15 hours before being
