Blend 1 March 2021 For Spinning Away, we captured the unique microflora of Southold farm and cellar by placing our coolship in their vineyeard, filling it woth wort, then letting the wort slowly cool overnight and collect wild yeast. We then took the wort back to JK for 100% Spon fermentation in our barrel cellar. The resulting two year old blend exhibits the unique terrior of
