Appalachian Gap Peregrine Gin (750mL) Amador a dash of black pepperAppalachian Gap Distillery wanted to create a dry gin to complement their botanical Mythic Gin. They took inspiration from Dutch style gins, with a nod to Indonesia, to create a dry gin featuring emphatic juniper and cumin, balanced with orange peel, angelica, ginger, cassia, coriander, and cardamom. The distillery macerates the botanicals for a week in their base spirit, made in house from barley, corn, and rye. The result is redistilled in their
