Malt Master David Stewart developed the double maturation technique here: at least 12 years in ex bourbon American oak, then 9 months in ex Oloroso sherry casks, then 3 to 4 months in large tuns to marry. The bourbon wood imparts the vanilla and honey; the sherry finish adds depth, dried fruit, and spice.
