Florence et François Bachelier Vieilles Vignes Chablis 2021 COGNAC This is a great wineOld style Chablis from the North. Florence and her husband Franois are 8th generation farmers with eighten hectares in Villy. Most of their vines are betwen 60 80 year old including a tiny slice of the Chablis Premier Cru Les Fourneaux, the only Premier Cru to face due South. Harvested on September 21st, 2021, and after a traditional vinification, the wine ages on its fine lees for 8 to 9 months in stainless steel vats, before resting in oak barrels
