The estate is certified organic and biodynamic. The grapes are harvested by hand when very ripe, followed by long fermentation in barrels on fine lees, without stirring. Half of the wine is matured in 500 litre Stockinger barrels of less than 5 years old, with the other half in 10 to 12 year
