Old vines provide the dark cherry, rich mouthfeel. In old french, "tenir Chapitre" meant to hold the meetings regarding harvest & the vineyards. The wine is named after the old mill (moulin) where the vignerons used to hold these meetings. De stemmed, fermented in stainless steel. Matured in tank, as well as new and used barrels.
