Description
with little destemming and the wines spending up to two years in older barrels and foudre
The mineral-driven finish shows lovely persistence
Somewhat more moderate wood and menthol characters are present on the spicy liqueur-like aromas of plum
The tannins are quite round and polished
Paul Pillot, Chassagne Montrachet Vintage:2023 with little destemming and theA different aromatic profile is present with its array of resin, rosemary oil and petrol scented nose. Once again there is fine density to the delicious and caressing but powerful middle weight flavors that coat the palate with dry extract on the clean and agreeably dry finale. This will need to develop better depth to achieve the upper end of my projected range.
