the MT was crushed and the Riesling was pressed whole bunch - the whole bunch Riesling juice went ontop of the crushed MT for all of alcoholic fermentation

Elevage in used demi muids of 600L and used barriques of Pinot Noir for 9 months

The Cabernet Franc was fermented with 100% stems using all native yeasts
