2022 Jerome Galeyrand, Gevrey-Chambertin La Justice, Cote de Nuits, France The Kyoto Distillery baker’s chocolate noteVariety: Pinot Noir Vine Age: Planted in 1960 Terroir: From a site east of D974, on sandy, well draining soil interspersed with alluvial pebbles. Viticulture: Organic (Ecocert, 2019), biodynamic methods, short cordon de royat and guyot pruning. Vinification: No added SO2 during vinification. 15 20% whole cluster, ambient yeast fermentation with punchdowns and a few pump overs. Aged for 12 14 months in barrels (20 30% new). No fining, light filtration
