The fruit is hand picked, whole cluster pressed, and fermented using native yeasts in a mix of stainless steel and older barrels; levage runs about ten months on fine lees with minimal new oak, and the wine is bottled unfined, unfiltered, with low sulfur. 1 btl limit per
