Long lees aging and zero dosage give No. 002 its precision first architecture: laser cut citrus, green apple skin, subtle red fruit tension, and a fine, chalky mineral thread that mirrors the limestone of Morstein and Kirchspiel. The mousse is ultra fine, the palate taut
