The fermentation happens naturally and is followed by 12 months of aging on lees

Both direct pressing (destemmed and whole cluster grapes) and the saigne method is used. The wine undergoes a medium length skin maceration and is fermented spontaneously with native yeast. Wine ages on the lees for 6 months in concrete vats and barrels.
